If you’ve been reading this blog for any length of time, you know my feelings about veggies and how you should eat them at every meal of the day.
But, like most Americans I expect, I have trouble fitting them in at breakfast. I want to, but a bowl of cereal or slice of toast is just so much simpler most of the time.
So, I thought I would compile a list of ideas and recipes for incorporating veggies into the most important meal of the day—and then share them with you!
Who’s with me? Are you going to try to eat more veggies for breakfast?
Super Easy:
- 1/4 avocado mashed on whole wheat toast
- 1 scrambled egg with frozen spinach (or other greens like kale or swiss chard) and garlic
- 1/2 C fat free cottage cheese with 1/2 C fat free salsa and 1 slice whole wheat toast
- 1/2 bagel with 2 T hummus and veggies like sliced cucumber and tomato
- English muffin with 2 T shredded cheddar cheese and sliced tomato, broiled
- whole wheat pita pocket with 1 egg, cherry tomatoes, spinach, mushrooms and onion
- Pan con Tomate: rub some bread with fresh garlic and plenty of ripe tomato, then drizzle with olive oil and salt. Top with cheese, ham or sausage if desired.
