We made it! Twelve weeks of DIY foodie Christmas gifts. And to wrap it all up, I present my mother’s apricot nut quick bread recipe.
Every year, my mom makes loaf upon loaf of this stuff to give to coworkers, neighbors and friends—all of whom look forward to it every year! This year, she had eye surgery about a week ago, so she ONLY made four batches of mini loaves. Good grief!
I only made ONE batch, which produced five of these charming mini loaves in bake-and-give cardboard loaf pans from King Arthur Flour. They are headed to my neighbors’ mailboxes this afternoon!
Apricot Nut Bread
2.5 Cups flour
1 Cup sugar
3.5 Teaspoons Baking Powder
1 Teaspoon Salt
3 Tablespoons Oil
.5 Cups Milk
.75 cups Orange Juice
1 Egg
1 Cup Finely Chopped Nuts
4 Teaspoons Grated Orange Peel
1 Cup finely chopped Dried Apricots
Heat oven to 350. Grease and flour large pan or multiple small pans. Measure dry ingedients into mixer bowl…Stir…Add remaining ingredients. Stir half a minute scraping sides several times…Pour into pans…Bake one large loaf about 55 to 65 minutes…Loaves will be golden brown and pick incerted into center will come out dry….Smaller loaves should be checked at 45 minutes.
