Inspired by Barb at Creative Culinary and several other blogs I’ve been looking at, I thought I would start posting the occasional cocktail recipe, and what better time to do it than just before Friday happy hour?
For our first course, we were served La Paloma, a fizzy spin on a traditional margarita that went outstandingly well with salsa, guacamole, and chips. (If you can get the guacamole and chips from Pica’s, so much the better!)

A fizzy twist on a traditional Margarita.
2 oz Espolon Tequila
6 oz grapefruit soda (like Jarritos or San Pellegrino grapefruit)
1/2–1 oz lime juice
Gently mix tequila, soda, and lime juice. Serve on the rocks with a salted rim.
