Inspired by Barb at Creative Culinary and several other blogs I’ve been looking at, I thought I would start posting the occasional cocktail recipe, and what better time to do it than just before Friday happy hour?
Hey, it’s 5 o’clock somewhere, right?
Today’s inspiration and recipe comes from BTown Wine & Spirits in Boulder, who partnered with Pica’s Mexican Taqueria for their outstanding El Milagro del Cerdo dinner last week.
For our first course, we were served La Paloma, a fizzy spin on a traditional margarita that went outstandingly well with salsa, guacamole, and chips. (If you can get the guacamole and chips from Pica’s, so much the better!)
La Paloma |
- 2 oz Espolon Tequila
- 6 oz grapefruit soda (like Jarritos or San Pellegrino grapefruit)
- 1/2–1 oz lime juice
- salted rim
- Gently mix tequila, soda, and lime juice. Serve on the rocks with a salted rim.
I have it on good authority that La Paloma may make an appearance on Pica’s summer cocktail list. Until then, enjoy one at home!
