I’m two weeks into my Foodie Magazine “Diet” Challenge. Want to see my week 2 results?
That’s right, peeps! I’ve now lost a total of 3.8 pounds in two weeks eating recipes from the most recent issue of Fine Cooking magazine.
What, WHAT!
I did NOT, however, do that great tracking what I ate this past week, so no long-ass trackers for you to look at this week. I will link to the recipes below, along with any updates I made to them. And I will also tell you that I took my kid out for Chick-Fil-A and went to a SUPER greasy Mexican restaurant for dinner last week in addition to those dinners—because I don’t want you to think I’m cheating by going all “diet food” on you!
I also didn’t get in as much intentional exercise as I had hoped. Mostly weeding the garden. But this week I’m doing the Say It, Sweat It, Get It free challenge from Erin Stutland, so hopefully that will get my booty in gear!
This week, I cooked:
- Chicken Paillards with Asparagus and Dill Sauce — No adjustments to this recipe. It was very good, and we served it with boiled new potatoes per the suggestion.
- Pasta with Smoked Ham, Peas, and Mint — Clearly the family favorite so far. I subbed half and half for the cream and fat-free feta because I had both on hand.
- Warm Beet and Strawberry Salad with Lardo and Cava Vinaigrette — This gets runner up for family favorite, believe it or not! I subbed greens from my garden for the arugula and pancetta for lardo (my grocery store didn’t have lardo). DELICIOUS! I will be making that vinaigrette again, but maybe not with cava (Spanish sparkling wine) as you have to open a bottle to use two tablespoons. :/ Luckily, I knew how to use up a bottle of sparkling wine—DRINK IT!
